This is the oldest English breed (Yorkshire, UK). It is still very rare outside its home country. Its docility and working strength have made it a preferred draft breed for a long time. It offers a meat with an interesting texture and a light chew. Its very fine marbling, coupled with its extra-muscular fat, offers a soft grain with a nice relief.
