Originating from the North Sea coast (Netherlands, Germany), it is the dairy breed par excellence, covering a large part of the European milk and cheese production. Recently, it has made its remarkable appearance on the shelves of large butchers. We know today that a well finished Holstein also offers exceptional meat when it is raised and fattened in a calm environment. Gustatively, it offers a well buttered round grain, a tender meat with a beautiful marbling and intense flavours.
